Almond Flour Shortbread Cookies

                           Almond Flour Shortbread Cookies



  • 1 1/2 cups almond flour
  • 1/2 cup flour
  • 5 T Sugar
  • ¼ tsp salt
  • 2 T water
  • 4 T almond oil



  1. Preheat oven to 350. Line a large baking sheet with parchment paper
  2. In a medium bowl, combine all of the ingredients, stirring to combine (be sure to break up any lumps in the flour and/or sugar)
  3. Shape dough into 24 1-inch balls. Space balls 2 inches apart on prepared baking sheet.  Flatten to about 1cm thickness with a fork
  4. Bake in preheated oven for 10-12 minutes until golden
  5. Remove from oven and cool on sheet for 10 minutes. Transfer to a wire cooling rack and cool completely.
